Hamburger Green Bean Casserole Recipe

 

Ingredients:

1 lb. Hamburger
1 onion, diced
1 cup catsup
1-2 cans green beans, drained
Instant Mashed Potatoes or real mashed potatoes
Grated cheese, if desired
salt and pepper, to taste

Directions:

Brown hamburger. Add onion and saute until the onion is clear. Add catsup and green beans. Make mashed potatoes according to package directions. (To make the potatoes richer and more like real mashed potatoes, I use canned cream (evaporated milk) instead of milk) Layer in a casserole dish sprayed with cooking spray. Add grated cheese on top, if desired. Bake at 350 degrees for 30 mins. or until hot through.

Chocolate Covered Strawberries Recipe


This is one of the easiest and best recipes I have.

Ingredients:

Semi-Sweet Chocolate Chips 
Fresh Strawberries

Directions:

Melt chocolate chips in double boiler over simmering hot water. If you don't have a double boiler you can use a metal bowl inside of a pot of hot water. While chocolate is melting wash and dry strawberries. Dip strawberries in chocolate and lay out on a cookie sheed covered with waxed paper. Let sit until chocolate hardens. Refrigerate.

*You can use chocolate Hershey bars in place of the chocolate chips if you prefer.

**You could also use white almond bark if you prefer white chocolate.
 
***A cute idea I saw the other day on the Dr. Oz show was to put the chocolate in an ice cube tray then put the strawberries in each section of the tray. This way if you want to serve them on a tray they will stand up instead of laying down like they are when you lay them out on waxed paper.

Stuffed Baked Spaghetti Squash Recipe

Ingredients:

1 lb lean ground beef
1 onion, diced
1 bell pepper, diced
1/2 tsp. chopped garlic
1 4 oz. can sliced mushrooms
1 can diced tomotoes
1 can spaghetti sauce
1 spaghetti squash
2 tsp. olive oil
salt, pepper, basil, oregano
Grated cheese
 
Directions:
Place spaghetti squash on a cookie sheet sprayed with cooking spray. I have trouble cutting them in half so I cook it for a while and then cut it once it starts to soften. Bake at 350 degrees for about 15-20 minutes, then cut in half and scoop out seeds. Drizzle 1 tsp. olive oil on each half and salt. Bake another 15-20 minutes. When the squash is done, use a fork to scrape the inside of squash. It will look like strings of spaghetti. Put sauce inside the squash and top with grated cheese. I used cheddar, but would also be good with Parmesan and mozzarella.

Make meat sauce while spaghetti squash is cooking. Brown beef and drain. Add onion and bell pepper and cook them for a few minutes until they are softened. Add remaining ingredients. Simmer until ready to fill spaghetti squash.

Cinnamon Popcorn Recipe

 
 
Cinnamon Popcorn Recipe
Preheat: 250
Time: 30-40 minutes, plus cooling time

Ingredients:
1 bag butter flavored microwave popcorn
1 cup dry roasted peanuts--optional, but highly recommended!
1 cup brown sugar
1 teaspoon cinnamon
1 stick butter
1/4 cup syrup (original recipe called for light corn syrup I used regular syrup)
1 teaspoon vanilla extract
1/2 teaspoon baking soda
3 squares white almond bark (or substitute white chocolate chips)

Directions:
Pop bag of microwave popcorn according to package directions.  (I use smart pop 94% fat free...you don't need massive butter flavor here.) Spread on large parchment-lined baking sheet, removing unpopped kernels.  Spread peanuts over popcorn.

Mix together brown sugar and cinnamon in a medium microwave safe mixing bowl.  Slice butter and place pats on top of cinnamon/sugar mixture.  Drizzle corn syrup over the contents of bowl.  Microwave for 2 minutes, then stir.  Microwave for 30 seconds.  Stir.  Microwave for 30 more seconds.  Stir in vanilla and baking soda.

Drizzle cinnamon sauce over popcorn and peanuts.  Bake for 20 minutes at 250 degrees, stirring popcorn halfway through.

Melt almond bark in a small microwave safe bowl or liquid measuring cup according to package directions.  Drizzle over baked popcorn.  Allow to cool until chocolate has set.  Break into pieces and enjoy!
 
I found this recipe on Stay at Home Artist and made it yesterday. It is delicious. It reminds me of cinnamon rolls. It would be great to make for holiday gifts to put in little gift bags. I didn't have any corn syrup so I used regular syrup in mine and it was yummy.

I have been seeing all these recipes online for dishes with strawberries for Valentine's day, which inspired me to get in the kitchen and create my own recipe. I ended up doubling the recipe and making 1 dozen cupcakes and a 13x9 sheet cake.

Ingredients:

2 cups self-rising flour
1 cup sugar
2 eggs
1 cup milk
1 cup of Greek Strawberry Yogurt
1 tsp. vanilla flavoring
1 cup chopped strawberries
1/2 cup oil
*I used frozen whole strawberries, thawed and chopped.

Directions:

Combine eggs, sugar, milk, Greek yogurt, and vanilla, Gradually add flour.and mix until blended. Add chopped strawberries. Bake at 350 degrees. Cupcakes 12-15 minutes. 13x9 inch pan 40-45 minutes. Cool, Top with Strawberry Cream Cheese Frosting, if desired. Refrigerate.

Strawberry Cream Cheese Frosting

Ingredients:

1 8-oz. cream cheese, softened
4 tbsp. butter, softened
1 box confectioners sugar
1 cup chopped strawberries
1/2 tsp. vanilla flavoring

Directions:

Cream butter and cream cheese together, Gradually add confectioners sugar. Add vanilla, Stir in strawberries,  Frost cupcakes or cake.

Oven Baked Omelet Recipe

I am trying to do more low carb eating so I created this recipe. I like the idea because I can make it once and eat it for several meals.


Oven Baked Omelet Recipe


Ingredients:


8 eggs
1 cup milk
8 ounces sharp cheddar cheese, grated
1 small onion, diced
1 4 oz. can sliced mushrooms, drained
1/2 bell pepper, diced
salt and pepper

 

Directions:

Mix eggs and milk together. Add other ingredients and stir. Bake in a 8 or 9 inch square pan. Bake at 350 degrees for 30-45 minutes until done. Cut into serving sizes. I usually cut mine into four pieces, but you could do smaller pieces if you like. You can also add bacon or sausage to if you like.

I made this Chunky Chicken Soup Recipe tonight. Even though it is almost summer here and the temperatures are soaring, my granddaughter requested chicken soup for dinner. Of course we have the air conditioner on so the temperature in the house is comfortable enough to eat soup for dinner. It would also be a nice cold weather meal. My granddaughter and her mother have a cold, so I thought this would be a good choice for dinner in spite of the temperatures.

Ingredients:

1 tbsp. oil
1 onion, chopped
5 or 6 boneless skinless chicken breasts, chopped
1 can chicken broth
2 cans cream of chicken soup
6 soup cans of water
2-3 cups pasta noodles

Directions: 

Saute onion in the oil. Add chicken and cook until white throughout. My chicken breasts were frozen so I chopped them after cooking them a while. Add chicken broth, soup, and water. Heat to boiling. Add pasta, return to boil. Continue cooking for 10-20 minutes. I like to cook it until the noodles are well done. Serve in cups or soup bowls.

**To add additional nutrition to the recipe you could add celery, carrots, and frozen green peas. I'd add the celery and carrots while sauteing the onions and add the peas when you add the pasta.
