Oven Baked Omelet

I am trying to do more low carb eating so I created this recipe. I like the idea because I can make it once and eat it for several meals.


Oven Baked Omelet


Ingredients:


8 eggs
1 cup milk
8 ounces sharp cheddar cheese, grated
1 small onion, diced
1 4 oz. can sliced mushrooms, drained
1/2 bell pepper, diced
salt and pepper

 

Directions:

Mix eggs and milk together. Add other ingredients and stir. Bake in a 8 or 9 inch square pan. Bake at 350 degrees for 30-45 minutes until done. Cut into serving sizes. I usually cut mine into four pieces, but you could do smaller pieces if you like. You can also add bacon or sausage to if you like.

I made this Chunky Chicken Soup Recipe tonight. Even though it is almost summer here and the temperatures are soaring, my granddaughter requested chicken soup for dinner. Of course we have the air conditioner on so the temperature in the house is comfortable enough to eat soup for dinner. It would also be a nice cold weather meal. My granddaughter and her mother have a cold, so I thought this would be a good choice for dinner in spite of the temperatures.

Ingredients:

1 tbsp. oil
1 onion, chopped
5 or 6 boneless skinless chicken breasts, chopped
1 can chicken broth
2 cans cream of chicken soup
6 soup cans of water
2-3 cups pasta noodles

Directions: 

Saute onion in the oil. Add chicken and cook until white throughout. My chicken breasts were frozen so I chopped them after cooking them a while. Add chicken broth, soup, and water. Heat to boiling. Add pasta, return to boil. Continue cooking for 10-20 minutes. I like to cook it until the noodles are well done. Serve in cups or soup bowls.

**To add additional nutrition to the recipe you could add celery, carrots, and frozen green peas. I'd add the celery and carrots while sauteing the onions and add the peas when you add the pasta.

Strawberry Cake Recipe

I made this cake today for the first time and it's delicious. It would really be good with some whipped cream on top.

Ingredients:

Cake:
2 cups self-rising flour
1 cup sugar
1/2 cup vegetable oil
2 eggs
1 cup milk
1 cup Greek strawberry yogurt
1 cup sliced strawberries

Topping:
1-2 cups sliced strawberries
1/2 cup sugar
1/2 cup water

Directions:

For cake stir all ingredients together. Pour into 8 or 9 inch square pan. Bake at 350 degrees for 40 minutes. Make topping while cake is baking. Put ingredients in a saucepan and bring to a boil over medium/low heat. Turn down to low until cake is done. Pour over cake immediately after removing cake from oven. It looks like a lot of sauce, but it will soak into cake as it cools. Cut into squares and serve. Can use whipped topping or whipped cream for garnish or layer it over the cake once it cools. Refrigerate.

Cabbage Casserole Recipe


 Cabbage Casserole Recipe


You can make this recipe with fresh cabbage or canned cabbage. If you use fresh cabbage you need to steam it first until tender.

Ingredients:


1 head cabbage, steamed or 2 cans cabbage, drained
1 can cream of mushroom soup
1/2 soup can milk
4 ozs. sharp cheddar cheese, grated

Topping:

1 roll Ritz crackers
1 tbsp. butter melted

Directions:


Mix first four ingredients together in a 2 qt. casserole dish sprayed with cooking spray. Top with Ritz Crackers. Drizzle with butter. Bake at 350 degrees or until heated through.

Roast Beef with Potatoes and Carrots

Ingredients:

2-3 lb. boneless chuck roast
2 cans golden mushroom soup
1 pkg. Lipton onion soup mix
1 lb. baby carrots
2 lbs. new potatoes (cut in quarters)

Directions:

Brown roast on both sides in pan sprayed with cooking spray. Add vegetables, soup, and soup mix. You can cook this on top of the stove in a dutch oven, in the crock pot, or in the oven. If your family is like mine, you may need more potatoes, carrots and gravy. You can also substitute the golden mushroom soup for cream of mushroom soup if you like. You can serve over rice, if desired.

Banana Cream Cake

This cake would be good with a cream cheese frosting, but I didn't have the ingredients for it the day I made this recipe so I made a topping with 2 pkgs. Cinnamon and Spice oatmeal and 2 tbsp. butter. You can top it any way you like.

Ingredients:

2 cups self-rising flour
1 cup sugar
2 eggs
1/2 cup oil
1/2 cup sour cream
3 ripe bananas, mashed
1 tsp. vanilla

Topping (if desired)
2 pkgs. Cinnamon & Spice Instant Oatmeal (dry)
2 tbsp. butter (melted)
 

Directions:

Mix flour, sugar, eggs, oil, vanilla and sour cream. Mash bananas with a fork and add to cake mixture. Pour in a 9 inch square pan sprayed with cooking spray. Sprinkle with topping, if desired. Bake at 350 degrees for 40 minutes.

Stuffed French Toast with Strawberry Syrup

I made this recipe for my granddaughter's 13th birthday. It is delicious and we both enjoyed it very much. I like making up a big batch of this recipe. It heats up well if you have leftovers. You can also wrap the french toast individually and freeze it until you're ready to eat it.



Ingredients:

12 slices of bread 
**I prefer wheat bread**
8 oz. cream cheese

2 eggs
1 cup milk
1 tsp. vanilla flavoring

1 cup strawberry jam or preserves
1-2 cups fresh or frozen strawberries, sliced

Directions:

Put strawberry jam in small saucepan on low heat. Heat until it starts to boil. Add strawberries. Only cook strawberries long enough to heat through. Spread the cream cheese on half of the bread slices and cover with other half of bread slices. Mix together eggs, milk, and vanilla. Dip bread in the egg mixture and grill on griddle sprayed with cooking spray, if you have one, if not, use a frying pan to cook the french toast. Cover with strawberry syrup. Enjoy.
